Hot dogs are not the only campfire food.

As my family has started doing more camping, I have started doing more campfire cooking. I've been scouring the internet for good options. I have a thing here. It can't be too fussy. I don't want to make it too hard. Yes, you can actually prepare some pretty gourmet food over a campfire or camping grill (if you're lucky enough to travel with one), but to me it's not worth the work. I'll do some prep at home in order to improve the campfire meal but I won't pack my entire pantry and spend the night washing raw meat dishes under a spigot. I found this recipe on the Lauren's Latest blog and have made it multiple times. It is definitely worth a try!

  • 1 1/2 cups elbow macaroni

  • 8 oz prepared Alfredo sauce

  • 1/2 cup grated sharp cheddar cheese

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup mozzarella cheese

  • 1/4-1/2 cup half and half or whole milk

  • Salt and pepper, to taste

  1. Cook pasta according to package directions. Drain and rinse with cold water.

  2. Stir alfredo sauce into the cooked pasta with the three cheeses and enough milk to keep things creamy rather than sticky. (This is so your mac and cheese doesn't dry out while it's staying cool.)

  3. Stir in salt and pepper to taste.

  4. Divide between four mini aluminum pie tins {or one big one}, sprayed with nonstick cooking spray.

  5. Spray one side of aluminum foil with more nonstick cooking spray and cover each individual mac and cheese portion, sprayed side down, facing the food. I actually double layer this to ensure secure seal when flipping on the grill. Store in a large plastic food storage bag in a cooler until ready to cook.

  6. Prepare a fire and let it burn down to the coals. Place a cooking rack over top that would be a few inches above. Place each pie tin over the hot coals and cook 8-10 minutes or until hot - flipping occasionally. Remove from fire and serve immediately.

  • This has become a favorite in my household. It usually makes 4 tins and we are a family of three so I have one to share with our camping friends too.
