Granola - choose your own adventure style

Wait, I haven't shared my granola recipe yet? A dozen blog posts and none of them featured this recipe? I'm sorry. It probably should have been my first. I've been making my own granola for years. First of all, I'm too cheap to buy the amount of granola we consume at the grocery store. Second, I've become picky. I like my granola a certain way. I don't want it too sweet. I do like a lot of cinnamon. If you like large clumps in your granola you can play with adding more sweetener here, but I'm fine with the crumbly pile that results from this recipe. 

I was introduced to making granola by Martha Stewart's "Everyday Food" magazine (which doesn't exist any more). The original recipe found here used molasses and pecans. I made it faithfully for years before I tired of the taste... or maybe I just didn't have the proper ingredients... so I branched out. My new favorite uses honey and pepitas (pumpkin seed kernels).

 

Ingredients:

  • 2 tbsp vegetable oil

  • 1/3 cup sweetener (honey, molasses, maple syrup)

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 3 cups old fashioned oats

  • 1 cup shredded coconut (I like unsweetened but you can use what you'd like)

  • 1/2 to 1 cup nuts or seeds (pecans, almonds, sunflower seeds, pepitas)

Preheat your oven to 325º. 

Add the first 4 ingredients to a large stainless mixing bowl and stir to combine. Next, I add the oats, coconut and whichever nuts/seeds I've chosen. The options are really limitless here. Your nuts can be whole, slivered, chopped... whatever you choose with be fine. IF you are using a very oily nut or find that your nuts brown too much for your liking when you've baked your batch, try adding them 5 or 10 minutes into the baking process. You can sprinkle them on at that time and they won't acquire a burned flavor. 

Spread the mixture evenly on a baking sheet and bake for 20-25 minutes. I set my timer for 10 minutes and toss the granola around on the pan at that time. For the remainder of the bake I move it around every 5 minutes because I find that the edges brown too much for my liking. I have experimented with dropping the oven temp to 300º, however I feel that the granola can come out looking a little pale when I do so. 

In case you didn't pick up on this from reading the directions, MAKING GRANOLA IS SUPER EASY. You really should try it. The way your house smells when you're baking it is just a little bonus gift :) 

 

My favorite way to enjoy the finished product is to sprinkle it over yogurt and top it with fresh berries. My uncle likes to pour milk over it and eat it like cereal. Either way, its delicious.
